The purple flowers of pubescens and of course all the other plants that have purple flowers,
is the result of the accumulation of molecules (pigments) called anthocyanins.
The production of anthocyanins is regulated by 1 or more genes.
In nature, mutations are very frequent and the capsicum is not exempt from these mutations,
In fact, in many plants are frequently observed mutations of any kind.
So if the mutation occurs in genes that regulate the biosynthesis of anthocyanins, they become inactive and flowers
turn white or almost white.
The Rocoto S.Isidro is another example of this mutation
