Using Rhubarb?

Has anyone used rhubarb in a sauce before?  I am wondering as I always have extra and it has a ph of 3.1

OH Dude, I bet a Strawberry, Rhubarb, Fatalii sauce would be Awesome over Pancakes, Ice Cream, Cheese Cake, your girlfriend / wife
 
Joking aside, it really would be a great sauce and if you don't do it for us I guess I'll probably have to

This is my first year trying sauces, so which pepper would go best with rhubarb in your opinions?  And other ingredients to blend with it.  I do love my garlic and onions.

x2 on what RocketMan suggested.  I think a White 7 or Giant White Hab would be complimentary myself.  But strawberries always come to mind when I hear the word Rhubarb.  Probably cause my Mom would always make Rhubarb Strawberry jam.

I'll have to differ on the strawberry part - I love rhubarb, but can't stand it with strawberries. Rhubarb and chiles, however, sounds fantasmic.

Either way though I think the Fatalii, Datil maybe a White Bhut would be a great fit. As for other ingredients I like

Strawberries
Sweet Onion
Carrot or maybe Sweet Potatoes
Roasted Garlic
Maybe some fire roasted peppers

I'm sure there are a lot of other fruits that could fit if your not partial to strawberries. They're just traditional for me.
