DTS FTW! Nice sweet/salty balance here. And stuff I like to eat! Homemade brioche, perfectly poached eggs for running, bacon caramelized in maple/chili/butter sauce, gruyere for sharp and savory balance, drizzle of the sauce, a chili. The only thing I would have done differently (maybe) is not caramelize the smoked bacon, let is shine as bacon, and not taste like candy. But since it was the same maple sauce used to make the drizzle, and not full-candied with brown sugar, it won me over. It wasn't an additional sweet, it was just tying it in. But still, I'd try both ways. Yours could be better, hard to judge from a screen. I love a good sweet/savory balance for brekkie, this had the layers, and enough savory with two eggs, cheese, and smoked bacon. It did not look cloyingly sweet. It looked... simply, and elegantly... amazing. This is the one I would order at a restaurant.
Booma, excellent job making real bagels. Boiling, and not straight baking, or cheating. We have something here called a French toast bagel. It's an eggy bagel with maple syrup in it, and powdered sugar on top. This reminded me of that taken up a few notches! I wish it had eggs and bacon though instead of banana pastry cream and bacon. With the glaze on top, the sweet bagel, and banana cream, a bit sweet with just the bacon to balance it. Kinda like your play on a cream-filled donut. I'd try it! Creative.

keybrdkid, I REALLY like that, with the fresh pita, and the perfectly cooked eggs, melty cheese, etc. But I did not like the Spam in it, if that was county ham or some fiery sausage, it would have been my vote, I think! Well done!

I don't go much for sliced bread sammies or hard eggs on them, but every entry here was amazing and there was something for everyone's tastes!
