Water canning?

Hi guys, I'm new at this and have lots of uncertainties and plenty of questions. One of which is, is water canning a good option when making sauce? I have a recipe for Belize style habanero sauce that I'm looking forward to trying. However it makes more than i can use within a few weeks. So, after the initial cooking process, and the sauce has been removed from the blender, is it OK to transfer back to the pan to reheat for the canning process? It seams that cooking the sauce further after it has been blended may alter the flavors, but IDK.

This thread making Hot Sauce 101 pinned in this section of the forum talks about BWB and the process for it.  
 
 Cooking it after blendering it shouldn't change the flavor, but it may change the consistency.  The above link also has links to detailed canning websites.
