I saw a video the other day of Tabasco being made and I noticed they pack a sheet of paper on the pepper mash before the barrel is closed for fermentation.
Does anyone know what kind of paper that is?
It does not seem to be your normal parchment paper because it seems to be thick enough to make it "sturdy" and in another video when they opened a 3 year aged barrel the paper they removed did not seem drenched with liquid or soggy at all.
