Since I easily process over 100 bottles each year, it's one of mine. Commercially, I guess it would be Tapatio or Cholula, but that's only when we go out to eat Mexican and I forgot to bring my own. The last commercial hot sauce I had in the house was Warrant Man's.

We have a rotating selection of lucky dog, palo alto, yellowbird, charman, seafire, ghostfire, heartbreaking dawns, high river, el fuego, some new ones from Oz from Shorerider...

The "house" sauce here is Valentinas. But I have a wide variety and rotate between them depending on heat and flavor profile I want. My most common is probably Spice Trade's Druid green sauce.

Crystal is my Louisiana choice not my overall choice. But I must keep a bottle in the house. Surprised you don't.

I tried the green one and wasn't a fan. Have you tried the green Tabasco sauce? It's the best green hot sauce from a bottle I've tasted, just wish it was hotter.

Yes it's got a bit more vinegar than I like.
I find the De La Viuda green, with Habanero & Poblano very tasty on grits & eggs..

Apart from homemade, it's usually some type of sriracha, but Cholula or Valentina get regular spots in the lineup.

If not one of my own concoctions, Nando's Peri Peri, Melinda's Ghost Truffle, Melinda's Ghost Wing Sauce, and Walkerswood Jonkanoo are steady in the rotation. I still haven't gotten my hands on some Bertie's but I understand that it's very good.

Peri-Peri is well-known so I won't give a flavour profile.
Portuguese is very garlic and paprika forward with a good peri-peri chile bite! Very rich and deep flavour. Really good
