hot-sauce What's your everyday hot sauce?

Since I easily process over 100 bottles each year, it's one of mine. Commercially, I guess it would be Tapatio or Cholula, but that's only when we go out to eat Mexican and I forgot to bring my own. The last commercial hot sauce I had in the house was Warrant Man's.

These two are our go-to sauces right now.
Peri-Peri is well-known so I won't give a flavour profile.
Portuguese is very garlic and paprika forward with a good peri-peri chile bite! Very rich and deep flavour. Really good

Not glamorous, just a pepper-forward homemade habanero sauce. I must go through 10 or 12 bottles this size a year, it goes on just about everything around here. I usually serve it out of an old sriracha bottle but the woozy makes a better picture

If anyone's interested the recipe's about 1 lb orange habaneros, fermented noma style w/ 2% salt by weight for about a month. Then add 30% white vinegar by weight, and salt enough so final salt % is about 4% and blend, no cooking. Keep refrigerated.
