In other news, nobody cooked a burger SV this TD that I'm aware of.

Is there doubt about the SV slab bacon - because unless you want to play human PID controller for 48 hr hours, no "skill" will approximate that magic ...

Id still take a homemade slab of pork belly, home cured for 7 -11 days, seasoned by my own hand, cut thick and pan seared in a cast iron over boiled bacon
