injected with a combination of apple juice, orange mango juice and garlic & herb cajun liquid
 
inside cavity rubbed with mustard

Only the inside was rubbed with spices as the outside is going to be rubbed with copious amounts of salt to crisp up the skin

Early in the morning, the fire will be lit, the pig rubbed down again and more pictures..stay tuned..
 
Btw, the pig fit perfectly into the cooker as it was built originally.
