food-bev Why always cook salsa????????

i love raw tomatoes.. one of the advantages of gardening is that i can eat while i pick, whether it be beans, tomatoes, peppers; any veggie (or fruit) grown by me thats small enough to fit in my mouth is typically eaten in the garden. ever eat a tomato & mozzarella salad? its such a crisp appetizer - acidic tomatoes with fresh, smooth mozzarella... mmmmm
 
oh there was a topic here; i dont recall ever cooking salsa, but then again ive never tried to save it in a jar for a period of more than a week...
