fermenting (Winter night Ferment

Decided i wanted to do a ferment tonight and i had all the ingredients laying around so i went for it! No ingredient weights so if i ever want to reproduce it it'll be tricky. Anyways i used 3 Hot cherry peppers, 3 Fresnos, 1 whole red bell pepper, half of a large sweet onion, a head of garlic, 3 apples, and a ton of frozen 7 pot jonah pods from a few seasons ago. I covered with some cabbage leaves before adding a 6% brine. I will let these 2 sit for about 45 days before processing
