I tried something tonight that looks pretty much like this:
5 cloves of garlic, peeled
1 regular to large vidalia onion, very roughly chopped into large chunks
3 cups of roughly chopped tomatoes with the hard parts of the core removed
5 datil peppers, or some amount of your preferred pepper
juice of one lime
1 tsp salt
1/2 tsp ground cumin
1 "handful" of finely chopped cilantro
1+ teaspoons sugar (optional)
Broil garlic, onion, tomatoes, and peppers until roasted to desired level. Pulse in a food processor until desired consistency is reached. Add processed ingredients to a pot along with lime juice and salt. Simmer slowly for 20 minutes and then turn off the burner. Stir in cumin and cilantro. Cool and store in the refrigerator.
The most important aspect in making salsa, in my opinion, is tasting everything along the way and adjust the quantities to your preference. For example, add the "right" amount of tomatoes to balance the onions for your personal taste. If something seems to be missing when you taste the final product, try adding some sugar, but add it slowly.
