I ordered the Trinidad Scorpion Sriracha from California Blazing Chile Farms after reading your post and I must say I'm really impressed with the flavor and heat. I also noticed it doesn't have any preservatives like the big brand srirachas so I'm wondering if I should refrigerate right away since the label doesn't state I should.
 
The Trinidad scorpion is great.
I don't always refrigerate mine. I keep a bottle of the ghost pepper sriracha in my backpack. A lot of people don't refrigerate their sriracha, and it seems that the FDA must require the makers to put the refrigeration stuff on their labels.

Funny you mention this. Melon and hot sauce work well together. Try any mellon with a dash of salt, squeeze of lime and heat of choice. AWESOME
