Anthocyanin has to have a genetic foothold to appear. It is common in some types of plants. Seems that it is a measure of protection against sunburn. Also common in certain other smokable plants.

For the sake of ease of checking the roots, and yet blocking light to them, you could always doublecup. Clear inner cup and opaque (walmart at least sells black solo cups) outer cups. Not as environmentally friendly, but you could always reuse them next year.
