Oh it's not bad, but it doesn't compare to a summer sausage made with elk.

I hate saying this, but the closest comparison would be the Hillshire Farms Summer Sausage. That stuff doesn't really compare though.

I forgot to mention, I plan to make a cheese/pepper version of this in the future. The base recipe leaves room for many possibilities

This one was not bad for the money. Something like $120usd from amazon. Commercial quality with a 7lb capacity in the hopper. Comes with 4 different sized attachments and I fully intend to use it for more than the elk in my freezer.
