The name "chutney" covers a wide variety of foodstuffs. The common element which makes them all "chutneys" is that they are added to meals to add flavour; the best English "translation" of "chutney" is "relish". As such, they can be, and are, eaten with a wide variety of foods.
It's really...
It was really good, if I do say so myself. :D
Yeah, it was my recipe. The lime added a nice touch of citrus. It was a bit different.
Half chicken breast with bone and skin. Organic because Publix has a nice sale going on.
Yep. Skin and bone.
Thanks!
I created a Lime Teriyaki marinade today. Tested it for pH, input it into a recipe template and did the nutritional analysis for it. That's all lab work.
Then I cooked it on the BGE using some mesquite wood in the charcoal. The result is even better.
Yeah it is. I just got it - it's 15 gallons. Pictured below.
I can get 40 pounds of mash for $70+shipping from LAPX. If I go commercial, then I'd rather just get the mash from them, I think. Vinegar and the other stuff to make the sauce is not that expensive. I have a label printer...
Thanks. I have an FEIN and my usual supplier is GFS. I hadn't really thought about them, but I guess I should. :) Great suggestion.
I'm making a bunch of cayenne sauce (Frank's copycat) for my nephew and his fiance for favors for their wedding. There will be 300 guests, so I need 300...
I live in central Florida and I've been checking with the local farmers markets for a quantity (bushel or two) of cayenne peppers in order to make my own mash and hot sauce. Nobody seems to have them. it's more of a want than a need, because I can always buy the mash from the Louisiana Pepper...
I'll have to try Defcon's.
No offense to all of those other wing sauces, they look like crap in the jar on the grocer's shelves. I know Frank and Theresa originated the wing in my hometown in the Anchor Bar, but theirs are not the best wings in Buffalo. Usually Duff's is at the top of the...
I get a wholesale price because I've done biz with them before...let's just say it's under $2.00 for a case. That doesn't include the caps or shipping. I'm close enough that I don't mind the hour or so drive to pick them up.
RocketMan's Burning Prairie Hot Sauce (L) and The Captain's sauce.
I was lucky to be on the receiving end or RM's sauces!
Burning Prairie Hot Sauce -
1. Appearance. The sauce is a beautiful green color and it's really appealing, especially if you like green hot sauces. I like the black...

Thanks for the detailed explantion. I was wondering as well what happened to the salt in the fermentation process of making a lime vinegar, as I know that most (if not all) vinegars contain no sodium. So...when maybe making a lime based vinegar, the base ingredient should be limeade...
I started a batch today and I kept it kind rather simple.
I used
64 ounces of Key Lime Juice.
7.5 ounces of pickling salt
1.5 ounces of Bragg's Apple Cider Vinegar w/Mother (as the starter)
We'll see what happens!
I just posted about global pak http://www.globalpak.net/neck-bands - they have different color shrink bands and you can order them in different sizes.
I'm close to them, but I have a good supplier in Tampa for woozies - All American Container...
