Bacon Wrapped Cream Cheese Stuffed Chicken (w/ Peach Ghost Scorpions)

INGREDIENTS
-4 thawed boneless, skinless Chicken Breasts
-4 tablespoons of Cream Cheese
-4 cloves of Garlic (minced)
-Chives, as desired
-4 Jay's Peach Ghost Scorpions
-8 pieces of thick cut Bacon
-Toothpicks

DIRECTIONS
1.) Preheat oven to 400° F.
2.) Flatten chicken breasts with a mallet to 1/2" thickness.
3.) Spread 1 tablespoon of cream cheese on chicken breast.
4.) Add desired amount of chives to chicken.
5.) Mince 1 garlic clove over chicken breast.
6.) Add 1/4 of diced ghost scorpions to chicken.
7.) Spread chives, garlic and peppers evenly.
8.) Repeat steps 3-7 three more times.
9.) Place 2 strips of bacon side by side lengthwise.
10.) From smaller end of prepared chicken breast, gently roll up chicken.
11.) Place rolled up chicken at one end of bacon strips, and gently roll bacon around chicken breast.
12.) Secure with toothpicks and place in baking dish.
13.) Repeat steps 9-12 three more times.
14.) Place baking dish in oven, uncovered, and bake for 35-40 minutes.
15.) Let broil for an additional 5 minutes, to make the bacon extra crispy.
16.) Remove from oven and let cool for 5 minutes.
17.) Place stuffed chicken breast on plate, slice to desired thickness, remove toothpicks, and enjoy. Serves 4.
