Beef / Lamb Burger

I grind my own meat cause it is just so much fresher so

for 2 hamburgers 1/2 each

1/4 lbs Leg / Loin of Lamb
1/4 lbs Cuttlet of Veal
1/2 lbs cut of Fillet Mignon

and for the rub

1 part White Pepper
1 part Cayenne Seasoning
1 part mole seasoning
2 teaspoons habanero salsa ( 1/2 onion, 4 cloves garlic, 10 orange habs + some vinegar )

Pinapple Circles
Cheddar or Swiss Cheese
favorite bbq sauce

i like to put the spices on top the burgers then 1 tsp each of the orange hab salsa and rub it in, then put the little bit left on the bottom.

cook to how you like it, i usually build a big fire, put the coals on each side cook it on the bottom for 4 - 5 minutes ( covered if cold ) then flip it to the top side right over the coals. then put to the side to melt the cheese and grill the pineapple and get the buns toasty.


i usually only cook for two, so if you have more maybe you have a better way to do it : ).

Serve with some nice wine or beer, enjoy!
