I'm liking that this recipe calls for grated carrot, and no red onion. I made the Habanero Gold recipe this year, that's in the Ball Complete Book of Home Preserving, but left out the onion as it seemed like a weird ingredient for jelly. I guess if you're using it to baste meats it would be okay, but I use mine with cream cheese on English muffins, or as a filling for thumbprint cookies.
