Curry Thread

Didn't see a dedicated one so created one :)
 
Been having a curry craving for a while so managed it a couple days ago.
 
-500gr Dried beans soaked 4 hours
-PC cooked for 20min (till soft)
-Spice mix- 60gr Coconut organic
                  1 tbsp Cumin
                  2 tbsp Turmeric
                  1 tbsp seasoning mix
                  1 tbsp org Coriander powder
                  1 tbsp Whole cardamon
                  1 cup Chines Cayenne (in this case)
                  1/2 tsp salt (to taste)
 
-Blitz mix and then add to chickpeas in pot, rise cooker in this case. Boil for 20min, add 1/2cup raisins (optional) and simmer another 30 min.
The raisins adds a nice body of slight sweetness to the mix.
 
I jarred 1.5L for later consumption :)

Good to have that recipe for reference...thanks for sharing...as you mentioned it's mostly a tomato base upon which to customize one's
recipe...looks like most of the Ingredients found in the Brit national dish Chicken Tikka Masala..just need to add some yogurt/cardamon
.heavy cream & of course boneless chicken...
 
I roast my own cumin seeds...but use Rajah brand Garam masala which is easily found...last yr I grew a lot of tumeric  was fun,just saved
some I bought & stuck then in the soil ...and I had quite a few to cook with.

Rajah brand Garam masala is the best ive tried sofar and they dont add salt to theirs. I got a bag of Swad to try also but it does have added salt.

The guy at a local Indian market turned me on the Rajah brand. Been buying it ever since.

I'll have to try this - we use Swad at home as it's readily available. Actually premixed garam masala is a rare thing for us to use when cooking. Usually most of the spices are either added whole or as a pre-made curry powder. Since the curry powder has pepper already in it, garam masala tends to be used for those dishes we don't want to make hot.

I have not tried the Swad yet but i really like the Rajah. I also get a Vadouvan masala from Amazon its not quite as good as the one from myspicesage but the price is very good on Amazon. Real nice mild curry powder that even works ok for Caribbean curry like oxtails or goat. Not too salty either.
