Fall Sauce making 2014; time to make the Sauces :)

It's that time of year to start making all the goodies that make for a great tasting Holiday Season here around the, well New, launch Pad. That means making:
Flaming Pumpkin
Pumpkin Chutney
Holidaze Sauce
Boutbon Fatalii Apple Butter

Starting with Flaming Pumpkin which will get a 45 day ferment and starts like this:

(That's 3 pounds of Douglahs with that Pumpkin)

Doing it a little different this year. Last year it was made with a mix of super hots and Habaneros. This year it's going to be a Douglah sauce.

Simmer a bit more to bring it back up to temperature.

and finally Part 4
 
After all the jars are filled and a lid and ring have been put on it's into a boiling water bath for 10 minutes

Now it's your turn, might take a while to do but it dang sure is worth it!
 
Little side note on the amount of Sugar used. I like my apple butter a little on the tart side, not sour more like just kind of sweet. The original recipe I used for Apple Butter called for 4 cups of sugar using 4 pounds of Granny Smith Apples. I typically use Fuji's which are a sweeter apple so I adjusted the amount I used down by half. This batch was 8 pounds of apples BUT, the apples were really sweet this year so I only used 1 cup of white sugar and 1 cup of brown. Ultimately, you need to let your own taste buds be your guide.

Making the butter this weekend, and the Holidaze the week after. No Fatalii around here, will Red Bhut substitute? I'm sure I'll have to use less of those...
