Finally ripe peppers but...

So i grew this yellow thai from seeds i took from fresh peppers. Ive been patiently waiting for the peppers to ripen. Finally i have a few peppers to get some color but... there looking more orange than yellow.

Also the ripe peppers are soft and feel empty.

I opened up the two and the ripe pepper is thin no with a few seeds while the green is firm with a lot of seeds.

And all the other ripening peppers are also soft. Anyone have any idea why this might be happening?

I'd wait a little while, iv'e had similar things happen with some of mine.  The first few to ripen are seedless or have very few seeds, even if other green ones are packed with seeds.  I'd say time will fix it.
