Finnish Karelian Stew / Hot Pot

I must introduce Finnish national dish:
KARELIAN STEW

Recipe Ingredients

400 gr pork shoulder
500 gr beef chuck
(400 gr lamb or mutton, if you wish)
butter
3 onions
(couple cloves garlic)
2 carrots
2 habaneros
2 bay leaves
8 whole grains of allspice
2 tsp ground black pepper
2 tsp salt
2 tsp chipotle powder
approximately 1-liter water


Recipe Cooking and Preparation Method

Cut the meat evenly into small 2cm cubes. Brown the meat cubes in butter on a hot frying pan or in a saucepan. Place the browned meat into an ovenproof pot (with a lid). Chop the peeled onions and carrots roughly and add to the dish. Add as much water as is needed to cover the meat. Add the seasonings and chopped habaneros.

Place the dish into an oven (250 degrees Celsius) without the lid and allow the meat to brown slightly. Stir the meat, add some water if needed and place the lid on top of the dish. Lower the heat to 150 – 175 degrees Celsius and allow the stew to simmer for at least 2 - 3 hours.


Food Serving Suggestion

Serve the Karelian Meat Stew hot together with mashed or boiled potatoes, pickled beetroots or pickled cucumbers and lingonberry purée.
