I'm leery of stainless.
 
The thickness looks pretty thin.
 
And we both know there's no such 'thang as stainless steel.
 
Not only that but stainless doesn't season like plate steel or cast iron.
 
Ever cook eggs in a stainless steel pan? 
 
What a bitch.
 
And you'd also want some wheels on it as, even if stainless, its a heavy bugger.
 
Just the top on mine weighs over 60 pounds.
 
You'd save some bucks over the Blackstone but at least going to Lowe's you could check one out for yourself.
 
Don't order from Amazon.
 
Lots of horror stories from shipping damage.
 
They weigh a got damn ton and UPS guys hate 'em.

I have never cooked with it and don't want to start now.

The nearest Blowes is 80 miles away, and Home Repot doesn't have that stuff.

But hear me now, believe me later, someday soon I will be havin me one of these things!

On thursday I'm going down to Plano and Central Market as mrs. blues wants some dry aged tenderloin for the holidays.
 
Beaucoup expensive and I might have to rob a bank before I get there.
