Grilled Sweet N Spicy Chicken (Pictures Included)


I'm grilling it up for the worlds greatest Dad tomorrow (He is the greatest to me and I'm sure your Dad is the greatest to you)


I will post all of the pictures first. After, I will post the recipe.






Chicken Leg and Thigh Quarters:

Mango, 4 Habaneros, Small can of Jalapenos with juice (Would have used fresh Jalapenos but I already had the can)

And then.. Your Favorite BBQ Sauce (If you have time to make home made sauce.. even better)

I forgot... If you do not eat Accent.. you can omit it and add a little more salt (I only use a pinch of Accent.. but.. I will post it at the end when I post the recipe)


Also, I usually cook with Sea Salt.. However, times are hard. Therefore, I've been using regular table salt. It'll still taste good but it's not as healthy.
 
Cubed mangoes

Cook the mangoes in a simple syrup until slightly mushy while constantly turning to ensure the simple syrup does not burn

Finely chop the Habaneros and boil them with your seasons and jalapenos and jalapeno juice in a covered pot for 30 minutes.

Add the mangoes in syrup and allow to cool to room temperature while covered


Pour over the chicken and allow to marinate in the refrigerator overnight (Approx 12 hrs)
 
The finished product with and without BBQ Sauce:
(With collard greens, bbq baked beans and cornbread muffin)

Also made steak, country style ribs, rib tips, Brats and polish... This was all I wanted after BBQ ing all day.. I may post pics of the others as I eat left overs in the coming days
