Homemade Sriracha Recipes?

Hi all,
There has been a lot of talk about Sriracha lately and a lot of people saying they make there own. I was hoping we could collect some recipes here... 
 
There's many recipes on the interwhebz,   The main points or differences seems to be -
 
using red jalapenos-
and fermenting (for at least a few days.)

Also consider leaving on the stems and using X percent of green Jals

No stems, no green jalapenos in sriracha.
 
after watching the brief news clips of the Hoy Fong facility, stems and green jalapenos look to be part of the sauce.

Also, I saw another brief clip of a specialty Sriracha sauce maker and saw green stems on the habs going into the Frement Buckets.

Why do you think its hype?
 
Because its popular?
 
You make it sound like a band that becomes popular and then gets accused of "selling out".
 
I 'preciate it ain't your cup of tea but what would you consider a better alternative in the same style?
 
Well, if I had an authentic recipe I'd share it!
 
This recipe isn't authentic as it's not fermented, but I have made it and it was a pretty good sauce.

THIS recipe is one I use as a guide when making some recently.  Did my own spin on it, and unfortunately didn't take accurate measurements.  I did ferment the red jalapnos for about 3 weeks, then mixed with some fresh jalapenos and other stuff.
