HOT foods of Guam

This is a faverate in most households on the island.
Ingredients
SET1
1 cup soy sauce
1 cup vinegar (white)
1/4 cup onion chopped
1/4 tsp black pepper

SET 2
4 lbs wings/drummets unfrozen

SET 3
3 cloves garlic minced
1/2 onion chopped
8-10 bird peppers (doni sale')

Use a large pot

1. Combine the soy sauce, vinegar, water, half of the onions, and pepper, stir. Add chicken and let marinate for 1-2 hours.

2.Sautee the garlic and remaaining onions. Remove the chiken and add to sautee until brown. Add the marinade to the chicken.

3. Bring to a boil and simmer till sauce is slightly reduced and thickened. Stir occasionally.

4. Adjust to taste add water if necessary. I add two habs but i like it hot!

5. Serve over sticky rice (Calrose short grain steemed.
 
Is that enough liquid to marinate 4 pounds? So you saute chicken and brown it, and then boil it in marinade? Don't you get flaccid chicken that was once crispy? Freaks me out to use the marinade the chicken was in, even if you cook it, but that's me.
