co-packer hot pepper sauce co-packers

cheap labor? There are separator type machines which are basically a food mill on steroids which can remove everything from seeds and larger. Personally, I wouldn't use a system like that because while the food mill is grinding around and mashing the pulp through the sieve plate, it's also grinding the stems and little tiny bits of the stem would be getting into the sauce and could give it an off or bitter taste. Last fall, I hand processed about 400 pounds of 7 Pots, TS Morugas, habaneros and even about 50 pounds of jalapenos. There is no "fast" way that I could come up with, especially when each pod needed to be checked for bad spots etc. Every pod was cut open to check for bad seeds inside also. If you just throw the whole pods into the pot, there will be bad ones in the lot. For the quality of sauces we're making, I have to open every pod. Oh! and :welcome: !
