Hot Pickled Garlic

Who doesn't love Garlic?

What you will need:

2 Cups of Garlic Cloves - Blanch for a minute.
3 Cups of Vinegar (or White wine vinegar) - Bring to the boil.
1 tsp Salt
Chilli to taste
Fresh Basil
Fresh Chives
1 tsp Peppercorns
1 tsp Yellow Mustard Seeds
3 x 300 ml jars or equiv.

You can use a canning machine or I place in a baking tray with water in a pre heated oven for a while.
Give them a week or so and chow down.

Aussie grown garlic.. not into that Chinese stuff.. nothing against the chinese, Ni hao!

Chillis / Pepper to taste - I used some of these I picked tonight along with fresh herbs.

After blanching cloves for a minute or so place in cold water to peel .. easy as.

Put spices and Basil/Chives in pre-steralised jars.

In goes the Chilli medley.

Put in garlic cloves and top up with boiled vinegar.

Why haven't I thought of this? I do picklese, hot pickled onions, and hot pickles. Hot pickled garlic just makes so much sense. Looks beautiful, and is now on my list of gifts to give.
 
I gotta make a batch of this this weekend. It looks and sounds terrific.
Not only should it taste great.. but I'll be able to ward off all the vampires that roam around in my neighborhood.
 
sweet! I chopped these cloves in half cause they were monsters. Post a pic when your done..

i just chewed on a few then.. only a day or so and already edible.. very nice.
