hot-sauce Jerk Sauce Recipe??

Hi All,

Does anyone here have a recipe for an authentic Jerk sauce? (the type that occasionally comes as a side to jerk chicken/pork, you know the stuff, pretty smooth, dark reddy brown, and plenty hot!)

Thanks in anticipation.

plenty on the internet, do a search and you will find hundreds...

I understand what you're saying about looking for recipes, alot you wont like but then again someone just giving you a recipe & saying its good, well you might like something better than that one if you look for them.

check this site out it has alot of recipes.

Can't add rep?!?!?

We don't need rep here. We're all adults and all the regulars know each other.

As for your original question, what I would suggest is look at several recipies, and try to find one towards your taste. Just because one person likes a recipe they suggest doesn't mean you will. I just use Walkerswood's Jerk Marinade, and add some chopped scotch bonnets if you want it hotter. It's really good and doesn't involve any work.

2 teaspoons allspice
1 bunch green onion
1 bunch thyme leaves
2 tablespoons fresh ginger
1 teaspoon black pepper
1/2 teaspoon nutmeg
1 teaspoon cinnamon
3 tablespoons veg oil
6 scotch bonnets
3 tablespoons fresh garlic
1 tablespoon salt
1/4 cup lime juice
1/2 cup orange juice

I use wings or leg thigh portions

1 tsp thyme
1 tsp fresh ginger chopped finely
3 tbs Brown sugar
1/3 onion finely diced
2 tbs Soy sauce (dark)
3 Tbs Lime juice
2 tsp allspice ground
1/2 tsp cinnamon ground
1/4 tsp nutmeg ground
2 cloves garlic chopped
1 tbs veg oil
1/2 tsp black pepper
3 seeded habanero chilli

maybe some fresh pineapple

blitz and coat meat at least 3 hours before cooking.

Good on chicken better on pork
Try it with fatalii peppers they add a great flavour that works with jerk well.
