Just the right one

Greetings,

I am currently working on a new food product that has four different flavor profiles, and of course, the most exciting one is the Hot & Spicy. I am currently using a Thai pepper because it seems to have less of the typical Mexican "tomato-y" or "mexican chili" type taste. I am looking for something in the hot category obviously, but one that will roast with nice smoky overtones. So far the dried Thai chili's I have end up with a "husk" flavor that takes away from hot and smokey flavors.

Any suggestions? questions? comments?
