Leftovers Thread!!

Yep.....not sure how this thread will go over, but I'd like to at least see how everyone repurposes their Thanksgiving leftovers.

There are a million ways to use leftovers.....and at the Circle-H.....we want to see them all!!

*As usual......the recipe would be nice, but straight-up food porn isn't bad either!

*Must have a hot pepper component (that kind of goes without saying!)

I'll go first:

Taking the leftover turkey and corn to make Turkey-Corn Chowder!

Boiled and picked the turkey.....then redeposited the bones and remnants in the stock pot for 4-5 hours with onion and celery. Drained the stock and let it cool.

The players:

6-8C Turkey stock, 1lb. pulled turkey, 12-14oz sweet white corn taken from the cob, 1 small onion (diced), 1lb. bacon, 1-1 1/2C heavy cream, 1 pkg cream cheese (melted), 1 C shredded cheddar cheese, 1/4 C sherry, 3-4T ghee (clarified butter), 3-4T flour, jalapeno, and S&P to taste.



BACON!!!!! (diced)

Heat the ghee in your pot.....then add the flour to form a nice blonde roux.



Once your roux looks like this.....add the diced onion and jalapenos. If the roux binds up too much, add a bit more ghee.



Add your turkey stock. bring to a simmer and add your cream cheese. (you may find it easier to just blend the cream cheese and some of the warm stock in a blender....then add to the pot. I used an immersion blender.)



Add your corn. Re-season, and simmer, stirring often, for 20-25 minutes. (it WILL stick to the bottom of the pot if you don't!)



Add your turkey (saving some for garnish) and your heavy cream. Re-season, and just heat the soup through. (No need to boil)

The Return of the Ham!
 
Changed ingredients (of course... :rolleyes: )  Couldn't actually get through a meal as planned.... :lol:

Only new ingredient was the baguette.  Everything else was on hand.
Reduced the marinara just so it didn't get the bread so soggy, laid on the ham and cheeses, get all Happy in the oven...

Here at the Circle-H, we will only toss leftovers if they get lost in the back of the fridge and get re-discovered during the following election year.
 
We REALLY appreciate the creativity of re-booting our meals!

I'm knocking around a way to burn Retta's awesome corn casserole......
 
Wheels are turning!
Take it out of the reefer nice and solid. Cut it into squares and do it like polenta cakes.

Maybe a nice bolognese poured over the top of the cake.
 
Omelet stuffed with dark meat (turkey) and cheese, mashed potato hash brown patty thingy, and English muffin with cream cheese and homemade 7 pot pineapple jam. Oh, and lots of beer.
 

 
Even better with a little rooster sauce...
 

 
This should help keep me warm for the Vikings game. High of 13 F today with a "RealFeel" of -6 F. Good football weather!

breakfast in our neighborhood-
1F/-17C at 7:15 this morning, this guy was waiting for me to put the juice out.  These were from later in the morning, when it had warmed up to about 4F.

but pork and eggs, or shrimp and eggs, or....FISH and eggs (smoked salmon)...or even better...fish eggs and eggs!(caviar on eggs benedict)... are OK.....???

This whole thing is making me quiver.
 
My buddy, Tim, had to work tonight......so no tamales (cause he's the one who loves them!)
 
Instead, I was going to make a Turkey Bog.....
 
Don't know what a Bog is?......look it up! ;)
 
Anyway......traditional Bogs have smoked sausage in them......and my son ATE MY PACK OF SMOKED SAUSAGE this afternoon for a "snack" before I got home..... :rolleyes:

I am beyond puzzled.
 
Who.....other than a stoner with no other possible option.....would choose a 1lb pack of smoked sausage as a meal all unto itself?
