Lobster Linguine with White Wine, Cream and Herb Sauce

Looks delicious! I love lobster... Gotta make this soon. I would love to do it and add douglahs to it cuz so far they are my fave pepepr.. hey tasted liek a fatalli but much less flavor.. The cream sauce should help a bit on the pain too lol
 
2 lbs lobster meat
6 slices of bacon
4 plum tomatoes (sliced and quartered)
3-1/2 cups half & half
1 cup of white wine
1 table spoon of butter
1 table spoon of olive oil
6oz can of tomato paste
6 cloves of garlic (sliced)
2 sprigs of thyme
2 sprigs of tarragon
15-20 fresh basil leaves
1 yellow bhut jolokia
shredded parmesan cheese
salt and pepper to taste


Boil or steam the lobster then remove meat and chop into small chunks. Set aside.
Heat a large skillet add the bacon and fry until crispy. Remove bacon and chop into small pieces.
Chop fresh basil, hot pepper and then add along with thyme and tarragon to bacon fat in skillet.
Add butter, olive oil and lobster meat. Saute everything for about 5 minutes.
Add half and half, tomato paste and white wine and bring to a boil and reduce about 20 minutes.
When sauce has thickened, add the garlic, bacon and fresh tomatoes, cover and simmer 10 minutes.
Sprinkle with parmesan cheese over the top and then serve over al dente linguine with fresh basil garnish.
