I used plastic knives and permanent marker... the marker was completely faded/invisible within a few weeks in the sun 
I have found that pencil markings hold up the best in the Alabama sun.

My ghost peppers look a lot different than those.  They get 3-4 inches long and wrinkly by the time they are that red. hmmm
