overwintering Over Wintering??

I'm purely a novice growing peppers. I have some Tabasco peppers just beginning to bear and saw reference to the practice of overwintering. Is this a common practice or do most peppers start from seed each season? I'm not sure if I should pull my plants this fall and start new seeds in the spring.
How would the mature plant be protected during the winter. I live in zone 6 (middle Tn)with winters day reaching low teens for short durations.
Thanks for any info. I think growing peppers will be a lot of fun / there is some great information i'm discovering here and other forums.
 
A lot of people do it. Search the process on the forum and you should come up with something. With that said, it's not really the hardest thing in the world to do.
