Please help Identify the final colors of these peppers

This year I ended up with more varieties then I will probably ever grow again. I just thought I would try to get a good seed bank going this year. The problem is that with some of these peppers I’m growing I do not know by color when they will be mature for seed. Last year everything I had was either Red or Orange in its final stage. Below are a few photos of the ones I have questions to at this time and would like know what will be their final color to harvest. Thanks for any help with this.

Scarlet lantern ripens to red
 
Aji White fantasy ripens to very light yellow
 
Aji omnicolour ripens to red - starts greenish, then yellow then orange then red. All colors on the plant at the same time, usually.
 
Black coban ripens to red, sometimes with purplish blotches
 
CGN 21566 ripens to orange/red
 
7PJ x PDN is new enough that`s it`s still variable. Some are similar to Elisir, some red.
 
CGN 21500 ripens to peach with pink
 
Cheiro roxa ripens to purplish pink with peach on the blossom end
 
Elisir ripens to dark reddish with purple/brown blotches
