seeds Question about seed saving

I recently picked my red ripe Bhut Jolokia S2 pods (original seeds from Semillas La Palma).  Today, I see that an orange pod was accidentally knocked off the plant.  So, are those seeds viable, or do I have to wait for it to ripen to a full red first?
 
I guess I have the same question about all the other varieties as well.

I am pretty sure that since it had started turning orange,,you will be good on the seeds viability
 
You could test one of the seeds in a paper towel to see if it germs

I don't want to start new topic, so I will ask there.

I have some seeds on cotton pads without bags, all was ok +28-30*C and today... I see that cotton pads fully dried in abaut 11hours... Seeds dried too... Some of them was opened(??? if anyone know what I mean), are they still alive?
 
Usually the seeds are good when the pods are orange. I don't know if stuffing it in a paper bag to get it to ripen will help seed development though.
