Quick question black jalapenos

Mine have a few nice looking peppers on them but its the end of the season and were hitting frost. They are in an unheated greenhouse. The peppers are fully black.... Sooooo how do I know if they are fully mature ? Will they get bigger after turning black pr should they be picked shortly after the color change. Also if I want to save some pods for seeds how do I do that, just let them fall off the plant ?

You can pick them now if they are 100% black, they are not very hot but will ripen to red and become sweeter.

Mine turn black but within a week they start to turn red.

Thats interesting. So are they better tasting when they are black and mild or red and sweet ?

haha that's an age old question with pepperheads, are jalapenos better red or green?  I like them better green as far as flavor goes, and they aren't all that hot to begin with so I usually pick them immature.

Yep everyone has different likes with jalapeño peppers. For poppers I use green ones that are getting dark and eating fresh I like them red. Its like green = lower heat not as flavorful and reds I find a bit hotter but more flavor. Its really a personal preference.
