Hi, I am growing chilies since 2009 here in Hungary, this will be my first year as a commercial grower. I am documenting the progress mainly for myself, but I thought it would be fun to share it with you guys. :)

[2013-03-26] Polytunnel inside a polytunnel. The temperature at night was still a bit cold, after a few days we had some really cold nights (-10C), so I even had to install 2 heaters:

I just finished smoking 20kgs of Jalapenos, plus I am smoking 10kgs of sweet pepper (kapya) at the moment for making a big batch of mild smoked bbq sauce. :)

These are our sauces at the moment:


Smoked BBQ Sauce made from smoked jalapeno, smoked kapya, tomato, sugar, salt, vinegar and spices.
Sweet Chili Sauce made from C. baccatum peppers, sugar, apple vinegar, spices
Indian Chili Sauce made from various C. annuum and C. chinense (indian varieties), sugar, salt, masala, spices
Evergreen & 7 Pod White Sauce made from Evergreen, 7 Pod White, rice vinegar, salt

Hope I will have time to make more pictures of the products.
