Ripeness

They change color completely according to the color of the variety grown, when ripe. Im not sure what you mean by cracking and brown lines? Could be rotten or something? Can you our up a pic or two of the pod/s?
 
Most do not cork, it's primarily those with thick flesh. Some jalapenos don't cork either, will get completely ripe without it happening. I once read that the more it corks the hotter it is and this may be true based on the ones I've grown in past years but I think it's mostly due to large soil moisture changes, soil that gets very dry in between watering or rain.
