S.I.P./Quarantine Cooking

Well, we are all in a mess, so lets have some fun and learn a few things along the way!  First and foremost might be that...you can make a burrito at home!!!  That's a bit facetious talking to this crowd here on THP, who have some of the maddest cooking skills on the interwhebz. 
 
SO, lets post what we are cooking at home, what is made from the pantry, what was out of but substituted, all basic cooking skills.....
 
I'll get it started!
 
A couple days ago, talking with my son who is now 21 and living on his own for the last 2 years, he said..."I gotta go, Mom, the roasted chicken is done.  We're gonna eat dinner now."  :sniff:  AWW!!!!  I'm a happy mom.....
 
 Here's what we did for family entertainment last weekend.  We rented Milo and Otis...for the DOG to watch!!!

what's in the meat drawer- pork chops
Pantry- wild rice (doctored up majorly!)
Breading with pantry crackers
tomatoes (cuz that was the best FRESH veg I could come up with.)

I didn't have Panko, so I blitzed some Mary's pepper crackers in the food processor with some flour,  added some spices and pepper powders, dredged the chops in seasoned egg/milk wash and then cracker crumbs.  Pan Fry in cast iron skillet with a bit of oil until golden brown and done.

Rice- Saute rice mix in some butter (ala Rice-A-Roni) until toasty nutty done.  Add water and chicken base/boullion, cook until done.  Key notes!  Use broth as the cooking liquid and saute the rice mix before with butter!  There are lots of quinoa, rice mixes....just don't cook with plain water.  Saute in olive oil/butter or not,  or not, but definitely use seasoning in the water.

share what you got cooking.  Might make this into a competition of who had the best cooking Hack, or best out of nothing dish, to be awarded when all of this shite is over.
 
and my husband has developed a strange affinity for watching musicals.

Yep, leg of lamb.

My Mom has some pretty heavy duty food restrictions but she can eat lamb.

I started doing a leg of lamb for our family Easter dinner years ago.

I couldn't have her over with the lockdown but she lives less than 5 mins away ,so I was able to bring her some over still hot for her Easter meal.
 
Lockdown #3? Man, feeling for you guys. We havent got the shots yet, so i have been diligent about masking, washing, and distancing.

It's waiting game/race here right now.

About half of my immediate fam has had their first shot in last few weeks, and my wife and I are on waiting list for essential workers .

I'm lucky to live in an area where a large majority of people take the guidelines seriously, so it is just a matter of keeping our heads down until the end of the tunnel.
At least there us a glimmer on the horizon now.
 
Lets just hope and pray that glimmer of light isnt an oncoming train!

Mine went well - 1st was a pushover-2nd was minor pain for a couple of days. Oldest son & GF were laid up for two days. The wife had minor discomfort for a day-2nd shot late this week.
 
Lol...no fainting...i didnt feel a thing. Feeling great. Hubby felt some stinging, might of been from the alcohol wipe.


Next dose in 4 weeks.




Then all we have to look forward to is mad cow disease in a year.
 
Update...2 days later...my arm is SORE!!!! Delayed reaction or something. :shrug:
 
And again....i am drooling on the keyboard...



Scrumptious looking short ribs.


We tries to do those style ribs a couple times recently. Havent nailed it yet like those short ribs.

It doesn't have to be a fat boy meal. My plate was over half salad, about another 30 % skin on grilled sweet potato slices and just a couple strips of the short ribs.

I will be going full fat boy today though. Going to try doing pork belly burnt ends for the first time .

 my short rib supplier went out of business. now I need to find a new source.
 
When and do you know why they are out of business?


Today, we saw a post of a pasta business opening in Twisp. Wow.

A while back. And I know because they were an independent fruit market that also had a meat monger. And they were one of the only consistent places I could find to get short ribs locally. There are probably others, but finding them at the right time when I'm at the store is more difficult. Trying not to have to go to whole paycheck for them if possible.
