Just thought I'd share my beloved recipe with you guys. Watcha think?
1 full ring chorizo
2 medium yellow onions
4 garlic
1000g (2.2lbs) beef mince
500g (1.1lbs) pork mince
2 cans chopped tomatoes
3 tablespoons tomato purée
1 jar sun-dried tomatoes, drained and chopped
1 tablespoon Worcester sauce
4 chipotle peppers chopped
2 teaspoons adobo sauce
350 ml dark beer
1st batch spices:
1 tablespoon cumin
1 tablespoon oregano
1 tablespoon smoked paprika
1 tablespoon brown sugar
1/2 teaspoon allspice
1 beef stock cube
2nd batch spices:
1 tablespoon cumin
1 teaspoon homemade ancho chile powder
1 teaspoon homemade Pasilla chile powder
1 teaspoon homemade chipotle chile powder
1 can kidney beans
1 can pinto beans
1 green bell pepper
1 red bell pepper
Juice of 1/2 lime
Cook onion and chorizo until soft, add garlic cook for 2 minutes. Add mince to brown, drain.
Add to mince and add everything but the spices, pepper and beans. Cover and simmer on low for 1 hour. Add 1st spices and simmer for 1 hour. Add 2nd spices and simmer for 30 mins uncovered. Add pepper and beans, cook for 15 mins on medium. Remove from heat, add lime juice. Serve!
For a very Scottish feel I'll sometimes add some black pudding, it goes so well with the chorizo!
