Stuffed pickled peppers

Stuffed pickled hot peppers are a typical site at local farmers markets. Lets see your best homemade ones
 
Ok.

Brine-

3 parts vinegar
1 part sugar

Amount depends on how many you are planning on making. I find its better to make more than not enough.

Filling-

WELL DRAINED SAUERKRAUT
Hot pepper flakes or powder
Onion powder or garlic powder (optional, to taste)


Top and core peppers
Heat vinegar and sugar just enough to dissolve sugar
Mix WELL DRAINED sauerkraut, hot pepper flakes/powder, and any additional seasoning.
Stuff mixture into peppers
Place peppers in a glass jar and fill with brine
Leave in fridge for a few days and enjoy

Sauerkraut must be well drained or your stuffed pickled peppers will get soggy.

We norm just eat them as a snack! But that's an awesome idea!!! They are really good!! They'd be good on a brat or as a side even?!?
 
Oh i get it now! i thought you bought the peppers and stuffed them like for an Hoirse devours.
I like that... Once i started in on them, i wouldn't be able to stop.
Like lays potato chips... no one can eat just one!
