I'm counting down the days until the primo kamado arrives. I really want to christen it with a giant pork shoulder. I may make some cauliflower tacos soon. That recipe is bomb. I also try and only cook during the weekends since the weeks are so busy,

 i can't seem to find a video of the Alton Brown episode the wife was watching the other day, but he built a terracotta smoker similar to the one in this video except used an adjustable hot plate in the bottom and just ran the cord out the manufactured hole 
I thought it was interesting anyway
