I don't think they were intended for chilies. The mash and the plastic may react with each other.
Your probably right, glass is better, do you know some good big size glass carboys with big mouth?
Why not this one? Its food grade and very handy http://torontobrewing.ca/index.php/brewing-equipment/fermenting/buckets-carboys-and-fermenters/6-5-gallon-food-grade-fermenting-bucket-with-lid-with-airlock-hole.html

Did the plastic is really a problem? I buy my vinegar in plastic containers and its very acid!

Pepper Exchange sell their mash in plastic container http://lapepperexchange.com/shopsite/unprocessed-pepper-mash.html

This is what I used to make the sauce for my daughter wedding.

It's glass. Here's an exerpt from the website:

Caution–Big Mouth Bubbler™ is a large hand-formed glass item that can be easily damaged if not used with proper care and handling. It may have variations in shape and thickness, and will show the normal bubbling characteristics of hand-formed glass. Extreme changes in temperature or sudden contact with hard surfaces may cause glass to crack. Handle with care–we strongly recommend using the Big Mouth Bubbler™ carrying harness for increased safety and ease of handling.

If your getting a plastic bucket from a hardware store better make sure it has the Food Grade emblem on the bottom otherwise the sauce you make could be your last and I'd hate to loose any of my spicy brothers and sisters to an oops.

Amen.

...and according to Lowe's and Encore Plastics, their white buckets are food grade.

I would steer clear of the bubbler. Plastec or glass. But especially glass. There are a ton of horror stories in the homebrew community regarding the quality issues with them. Not to mention breakage incidents.
