what to do with santa fe peppers.

Any recipe ideas or uses?
 
Last night I made some smoked poppers filled with bacon, cream cheese, green onion, lemon and shrimp. They were good but a little too hot for my guests.
 
I need a way to use up 3 plants worth of them :)
