- Higher mash temp to help ward off the fusels ... he's got experience with S-04 attenuating well beyond what they suggest ...
- Some subtle changes to the hop addition timings to lower IBU's a little bit and KISS ...
- Careful boil + fast wort-chilling process due to high amount of floor-malted Bohemian pilsner malt (pond pumped ice water) ...

Zorg's Zythos Purple Galaxy (ZZPG)
 
Based on 60% kettle efficiency.
Just under 3 gallons after dry-hopping losses.
 
~9.5% ABV
~6.6 SRM + Purple Ube
~80 IBU's
 
10   lb bohemian floor malted pilsner (91%)
  1   lb flaked wheat (9%)
1/2  lb light pilsner DME (15 min left in boil)
1/4  lb dried ube (purple)
 
"pilsner step mash" from 126F through mash-out, but mostly 151F, aiming for pre-boil gravity around 15.5-16P. Strategy was 90 min boil for SMM/DMS(O) + whirlpool for 15m ...
 
1 oz Zythos @75m
 
Whirfloc, yeast nutrients, and plate-chiller sanitization-start at 15 mins as per the usual.
 
Aim for post-boil gravity of 19-20P.
 
1 oz Galaxy for 15m whirlpool recirculation.
 
2 pkg Safale S-04, place at mid-to-upper 60F's for two days.
 
Future:
 
- 1 oz Galaxy pellets on day three of primary, substitute spunding-valve for blow-off apparatus.
- 1 oz Galaxy pellets on day five, switch to keezer, add Clear beer, and plug into distributor block at 10-12 psi.
 
(UPDATED TO REFLECT ACTUAL BREW DAY + 1/2 lb DME, STEP MASHED, & FULL 90min BOIL)
 
Off to a shitty start, having to replace $10/ft silicone tubing that my kitteh cleaned his teeth and/or massaged his gums on ...

Always have to do pre-brew plumbing, I swear ... lol!

I would have brewed a Gumballhead-esque beer on Sunday, but I don't have the right wheat malt ...
 
I basically have to brew a stout, and then I can brew either another stout/porter, or another round of the Red-Eye ...
 
The Citra is absent from the Red-Eye at this point ... it's fully zero, gone ... just a Columbus-tasting IPA at this point ...
 
It's still good, I like Columbus IPA's a la OB, but when the Citra was freshly dry hopped, it gave me a brew-boner ...
 
That Gumballhead was tasty though, and refreshing ... the best part of a wheat beer, without the worst parts de-emphasized ...

so, i woke up on the couch at 7:00 AM ... exhausted ... so I went in for a couple more hours, but on the way, I checked for ferm ...

woke up around 10:30AM to an email that I made a kitchen upside down last night, LOL ...
 
fixed that ... oops ... and ...
was just the dry pitch ...

I was studying holography and minimal surface topologies at UF (before I left to work at Arthur Andersen doing tax software) ... I love bubbles ... and klein bottles ;)
 
Wow!! Arthur Anderson... Have not heard that name in ages. I majored in accounting and they were one of the "big six" when I interviewed. Pretty sure they have been morphed into something different now. I thank my lucky stars that I choose this job over an accounting one.
