Pepper jelly not setting

Hey all. Got some pepper jelly i just made the other day that isnt wanting to set. Jars sealed well. I used 3oz of liquid pectin which is what the recipe called for. Any advice on what to do?
 
You can re-batch the jelly.  Empty it all out into the pan and follow directions with a fresh pouch of pectin.  Make sure to get it to a full rolling boil for 2 minutes, THEN add the new pectin. 
 
Wash the jars and rings, use new lids.
