Is a 2 gallon bucket enough for hydro/aero, or should I go 3.5 or 5?

My sepia serpent seems to have picked up its leaf folding mannerisms from my sunrise scorpion. If it picks up fruiting habits as well, it's gonna be a great harvest.

Only the top of a pepper is ripening. Red and orange, rest of it is green. It started two days ago, is this normal?
My friend sent me a vid of the LA Beast eating a cactus. It makes my face hurt just to watch it.
Baby venus flytraps also. I now own the 4 main kinds of carnivorous plants.
Does it really take more than a month to ripen? I could have grown three generations of beans in this time.
