They look healthy to me. Hard to tell but it could be natural variegation. I've had seedlings come up that the cotyledon look like that and the regular leaves come out looking normal. I'd start a few more just in case and give the current ones another 10 days or so. That way if they don't pop the new ones you started have a chance.

I'd recommend a simpler logo. Like thp said, needs to also look good small. I feel like most hot sauce labels and logos are more basic, easily identifed thick lined and simple fonts. Most the coloring is solid. Also, the fine lines and coloring in the smoke might not translate well to labels.   ...
